Bourbon 101: What Makes Bourbon Bourbon?
Before learning how to taste bourbon, it helps to understand what is actually in your glass.
Under U.S. standards, bourbon must be made in the United States from a grain mixture containing at least 51 percent corn. It must be distilled to no more than 160 proof, enter a new charred oak container at no more than 125 proof, and be bottled at a minimum of 80 proof.
Kentucky Bourbon has additional requirements. The Kentucky Distillers’ Association explains that bourbon labeled as Kentucky Bourbon must be cooked, fermented, distilled, and aged in Kentucky, with at least one year of aging in the state to carry a Kentucky designation on the label.
The result is a spirit deeply connected to its ingredients and aging process. Corn brings sweetness, while rye can contribute spice, wheat can create a softer profile, and malted barley adds its own characteristics. Yeast, barrel char, aging time, and even Kentucky’s changing seasons can influence what ultimately reaches your glass.

How to Taste Bourbon Like a Kentucky Bourbon Steward
There is no single “correct” flavor you are supposed to find in a bourbon. Two people can taste the same pour and notice completely different characteristics. That is part of what makes tasting interesting.
Instead of searching for the right answer, pay attention to four things: appearance, aroma, flavor, and finish.
1. Start With the Appearance
Before taking a sip, take a moment to look at the bourbon.
Notice its color and clarity. Bourbon can range from lighter amber tones to deep copper and mahogany hues. Factors including time in the barrel, proof, barrel char, and aging conditions can all influence color.
You do not need to draw conclusions from the color alone. Think of it as the first clue in discovering what is in your glass.
2. Discover the Aroma
Much of what we perceive as flavor begins with aroma, so resist the temptation to immediately take a sip.
Gently swirl the bourbon and give it a moment to settle. Rather than placing your nose directly into the glass, allow the aromas to rise toward you and inhale slowly.
What do you notice?
You might find familiar aromas like vanilla, caramel, oak, baking spices, fruit, or toasted nuts. Others may notice floral, earthy, or smoky characteristics.
There is no need to overthink it. The Kentucky Distillers’ Association recommends connecting aromas to foods and scents you already recognize. Your cinnamon might be someone else’s ginger, and your peach might remind another person of apricot. The goal is to develop your own sensory vocabulary.

3. Take Your First Sip
Now comes the part you have been waiting for.
Start with a small sip and allow the bourbon to move across your palate. Your first taste may be dominated by the alcohol, particularly with a higher-proof bourbon. Give your palate a moment to adjust before taking another sip.
On the second taste, look for the flavors hiding beneath that initial warmth. Perhaps the vanilla you noticed on the nose becomes more pronounced. Maybe you discover caramel, dark fruit, spice, oak, or something completely unexpected.
You can also pay attention to texture. Does the bourbon feel light and delicate, or rich and full-bodied? Does it coat your palate or disappear quickly?
The more bourbons you taste side by side, the easier these differences become to recognize.
4. Pay Attention to the Finish
The tasting does not end when you swallow.
The finish describes the flavors and sensations that remain afterward. Some bourbons have a short, clean finish, while others linger with warmth, spice, oak, or sweetness.
Take a few seconds before your next sip. What flavors stayed behind? Did something new appear? How long did the flavor last?
Learning to notice the finish is one of the easiest ways to start distinguishing one bourbon from another.
